Take a pan; add two cups of water and one cup of quinoa. Stir it and boil it for 15 min on slow heat. Check by pressing it if it’s soft and doubled in size its ready.
Take chopped kale in bowl, add olive oil, salt, garlic and lemon juice and massage it with your palm. This step makes kale very soft and chewy. Now add all the rest of vegetables, chick pea and quinoa. Also add peanuts –it brings crunchy ness in the salad. Adjust the taste according to your choice.
